ALMOND BROWNIES

FOR BROWNIES: 1. Soak all the dates in a small amount of water about an hour before preparing brownies, then put them in the blender and blend until smooth. 2. Melt 8 tablespoons of coconut oil and leave it to cool down. 3. Use a medium bowl and put dry ingredients into it (2 cups of almond flour, 5tbsp of cocoa powder, salt) and mix. Add the puree made from dates, 3tbsp of honey and vanilla extract and combine together. 4. Separate egg whites and egg yolks and using hand mixer mix first the egg whites until thick and add the egg yolk and mix together. 5. Very gently fold the eggs into the chocolate mixture using a wooden spoon until the two mixtures are the same colour, doing it very slowly will prevent knocking out the air. You need to keep the mixture as light and airy as possible to achieve nice brownie. 6. Prepare a medium baking tin and grease it well with coconut oil. Again very gently pour the mixture into the tin and bake for about 30 minutes in 180°C. 7. Leave to cool down completely before adding your chocolate. FOR CHOCOLATE GLAZE: 1. Melt 2 tablespoons of coconut oil, add 2 tablespoons of cocoa powder and 1 teaspoon of water and bring it to boil on a very small fire stirring all the time. 2. Add 1 tablespoon of honey or a bit more if you like to sweeten it. 3. Pour the chocolate straight away on the top of the brownie and decorate with whatever you wish or just leave it as it is with just shiny chocolate on the top. Enjoy your healthy, homemade snack any time of the day!

PIZZA BASE

1. Use a large bowl and combine all dry ingredients together. 2. Add water slowly and using a fork stir it into the flour until it comes together. 3. Transfer it on a clean surface a begin kneading and stretching for about 10 minutes or until you have smooth, soft dough. 4. Place it back in a greased bowl and allow it to grow until it doubled in size (it normally takes around half an hour to prove it). 5. Put it back on a flour-dusted surface and divide the dough into two halves. 6. Knead and shape each dough into a ball and leave for a further 30 minutes to grow. 7. Preheat the oven to 230°C and grease the baking tray. 8. Roll each piece into a pizza shape and place it on a previously greased baking tray. 9. Put your favourite toppings and bake for about 15 minutes depending on pizza size or until the crust is crisp and topping is bubbling.

EASY-PEASY CRACKERS

1. Preheat the oven to 170°C. 2. Mix all ingredients together and leave 10-15 minutes. 3. Stir everything well then split the mixture over 2 lined baking trays and spread very evenly, you can use a glass or a bottle to do so. The thickness should be between 3-4 mm. 4. Bake for one hour or until golden brown and crisp. If they do not feel crisp enough after an hour put it back in the oven for another few minutes. 5. Remove from the oven and cool. 6. Break into regular pieces and store in a closed container.

CRUNCHY PEANUT BUTTER BISCUITS

1. Preheat the oven to 180°C. 2. Prepare a baking tray and line it with some baking paper. 3. In a medium bowl put peanut butter first and add an egg into it and mix together until smooth. 4. Add almond flour and mix well you should get a nice dough, bring it together using your hands. 5. Shape little discs about 1cm thick and place them on a baking tray. 6. Bake for about 10 minutes.

SHORTCRUST PASTRY

1. Cut butter into small cubes. 2. Put the flour and salt in a large bowl and add the cubes of butter. 3. Use your fingertips to rub the butter into the flour until you have a mixture that resembles coarse breadcrumbs with no large lumps of butter remaining. 4. Add just enough of the cold water to bind the dough together. 5. Wrap the dough in cling film and chill for 10-15 minutes before using.

4 INGREDIENTS SODA BREAD

1. Preheat the oven to 190°C. 2. Prepare and flour baking tray you are going to use for baking. 3. In a large bowl mix all dry ingredients together: flour, baking soda and salt. 4. Add buttermilk and mix all ingredients together using a spoon, than when it starts to come together use your hands to pat and bring the dough together. 5. Shape it into a ball and place on a previously floured baking tray. Flatten the dough very gently with your hands to be 6-7 cm thick. 6. Score a cross on the top of the bread. 7. Put in the oven and bake it in the centre for about 50-60 min or tap the bottom for a hollow sound.

AROMATIC BANANA LOAF

1. Preheat the oven to 180°C. 2. Use baking paper to line the baking tin and grease well with coconut oil or butter. 3. In a large bowl mash ripe bananas with a fork or potato mashed than add 1 egg at a time and mix until smooth. 4. Add yogurt, chopped dates, desiccated coconut and chia seeds and mix well. 5. Add flours, baking soda, spices, melted coconut oil and milk at the end and stir well for a creamy consistency. 6. Pour into the tin and bake for about an hour until a skewer comes out clean.

CHOCOLATE ORANGE CAKE

1. Roughly chop the dates. 2. Grate zest from an orange, squeeze the juice and add to a blender. 3. Peel bananas and add them together with all other ingredients into a blender. 4. Blend well until smooth. 5. Line baking cake dish with some baking paper and grease it. 6. Preheat the oven at 180°C. 7. Pour mixture in cake dish and put in the oven. Bake for about an hour.
