CHEESY OMELETTE

1. Using a fork beat the eggs and add salt and pepper, beat again until well blended. 2. Grate your cheese. 3. In a small, stainless steel frying pan preheat the coconut oil on medium heat until hot. 4. Pour the eggs into the pan, tilt the pan slightly from one side to another to cover its surface completely. Let the mixture cook for about 30 seconds and continue tilting the pan until the mixture has set and no liquid egg remaining. 5. At that stage use a spatula and completely flip the omelette over and quickly put the grated cheese filling on one side of it. Let it melt for a few seconds and using a spatula gently fold omelette in half. 6. Put it on the plate and serve straight away.

BREAKFAST ALMOND MUFFINS WITH CHEESE

1. Preheat the oven to 180°C. 2. Grease muffin tray and dust with a bit of almond flour. 3. In a medium bowl mix together all dry ingredients: almond flour, coconut flour, salt, baking soda and rosemary. 4. In another bowl whisk eggs, yogurt and melted butter until smooth. 5. Combine all ingredients together and add grated cheese. 6. Use a tablespoon to put the mixture into the muffin tray and bake for about 15 minutes.

STUFFED MUSHROOMS

1. Preheat the oven to 180°C. 2. Grease the baking tray. 3. Wash mushrooms and place them on the baking tray. 4. Cut bacon in small cubes. 5. Grate cheese. 6. Stuff mushrooms with bacon and top with grated cheese and black pepper. 7. Place the tray in the oven and bake until mushrooms are soft and cheese is golden brown, about 20 minutes.

FLUFFY BANANA PANCAKE

1. Mash banana with a fork. 2. Whisk eggs in a bowl and add the banana paste. 3. Fry on a low to medium heat with coconut oil. 4. Serve with honey or syrup.

CREAMY PORRIDGE

1. Place water, porridge oats and salt in a saucepan and bring it to boil. 2. Once boiling, reduce the heat and simmer for 5 min until soft. Make sure to stir to avoid sticking to the bottom of the saucepan. 3. Serve with fruits of your choice.
