COTTAGE CHEESE MINI PANCAKES

1. In a large bowl put cottage cheese and banana and mash it with a fork. 2. Add an egg and mix slightly. 3. Add almond flour and mix together until smooth. 4. Use your hand to pick up apricot-sized pieces of dough, form balls, roll into flour, flatten and put on a flour dusted board. 5. Heat the coconut oil in a frying pan and fry on low heat from both sides until golden brown. 6. Serve with peanut butter and maple syrup.

GLUTEN FREE TORTILLAS

1. In a medium sized bowl whisk the eggs and melted lard and water. 2. Add dry ingredients: arrowroot flour, coconut flour and salt and mix together. 3. Fry on medium heat, pouring about 1/3 of a batter and spreading evenly on a frying pan. The tortilla should pull away from the edges as it cooks. Cook for about 1 minute on each side. 4. Put your filling and roll it. Enjoy!

CELERIAC CHIPS

1. Prepare a large baking tray and grease it well with lard. 2. Peel the celeriac, slicing off the top and bottom and sweeping down the sides to remove the tough skin. 3. Cut the celeriac into thick slices and then into fat chips. 4. In a large saucepan boil water with salt and add the chips into boiling water to blanch them (boil for 1-2 minutes). 5. Drain the chips and put them back into a saucepan. Add your spices: sweet paprika, salt, pepper and mix well. 6. Preheat the oven to 200°C. 7. Transfer the chips onto a baking tray and put in the oven. 8. Bake for about 30-40 minutes.

CHICKEN PIE

1. Preheat the oven to 180°C. 2. Line pie dish with shortcut pastry (use 2/3 and leave 1/3 for the top) and using a fork prick the base several times and cut off any edges. Line the pastry with baking parchment to completely cover it and fill it with baking beans and put in the oven to bake for 10 minutes. That prevents the pie from having a “soggy bottom”. 3. After 10 minutes take the pastry out of the oven and leave to cool. 4. In the meantime cut the chicken into small cubes, wash and chop the mushrooms and slice carrot and leek. 5. In a large pan put plenty of lard to melt and add sliced leek and spices: paprika powder, black pepper, mixed herbs and salt. Fry until all ingredients are incorporated and leek golden in colour. 6. Add chicken and fry together for about 5 min then add mushrooms and fry for another 5 min, stir from time to time to avoid burning. 7. Add water and simmer together 20 minutes or until chicken and mushrooms are cooked. 8. In the meantime mix double cream and flour together, make sure there are no bits of flour in it. You can use a whisk to do that or just allow enough time to mix it well with a tablespoon. 9. Pour double cream with flour into the pot and stir until thickens up then turn off. 10. Remove baking beans from the pie dish and put ready chicken mixture into it. Roll out the remaining piece of pastry and cover the pie. Pinch the edges to seal the pie, then brush the top with egg wash and pierce a few small holes in the top of the pie with a small knife. 11. Put in the oven and bake for about 30 minutes in 180°C until golden brown.

DELICIOUS HOMEMADE COTTAGE CHEESE

To make cottage cheese you will need some kitchen equipment so make sure you have it at home before you start making it. You will need the following: • large saucepan • wooden spoon • kitchen thermometer • strainer • cheesecloth METHOD: 1. Pour the milk into a large stainless steel saucepan. 2. Add yogurt. 3. Leave for 24-48 hours until you get thick soured milk that resembles jelly consistency. 4. Stir very gently and break it a little into smaller cubes. 5. Put the saucepan on a very small heat and stir occasionally with a wooden spoon. 6. Use a cooking thermometer to check the temperature, do not heat more than 37-39 °C; 7. Stir again and watch how the milk is separating into the curds and whey. Turn off the heat. 8. Leave until cools down. 9. Use a large metal strainer and line it with a cheesecloth, then pour the curds and whey into the strainer from the pot. Remember to put a large bowl under the strainer not to waste valuable whey. 10. Allow the milk strain through the cheesecloth for about 1 hour or longer if you like it really dry. If you want feta like cheese you have to press it for another few hours with for instance chopping board and some heavy item on the top of it. 11. Store cottage cheese and whey in the fridge.

BREAKFAST ALMOND MUFFINS WITH CHEESE

1. Preheat the oven to 180°C. 2. Grease muffin tray and dust with a bit of almond flour. 3. In a medium bowl mix together all dry ingredients: almond flour, coconut flour, salt, baking soda and rosemary. 4. In another bowl whisk eggs, yogurt and melted butter until smooth. 5. Combine all ingredients together and add grated cheese. 6. Use a tablespoon to put the mixture into the muffin tray and bake for about 15 minutes.

SHORTCRUST PASTRY

1. Cut butter into small cubes. 2. Put the flour and salt in a large bowl and add the cubes of butter. 3. Use your fingertips to rub the butter into the flour until you have a mixture that resembles coarse breadcrumbs with no large lumps of butter remaining. 4. Add just enough of the cold water to bind the dough together. 5. Wrap the dough in cling film and chill for 10-15 minutes before using.

ALMOND MILK

1. Soak almonds overnight in 3 cups of water. 2. In the morning put soaked almonds altogether with all water into a blender and blend well. 3. Add date syrup to sweeten and stir it. 4. Sift everything and add one more cup of water afterwards. 5. Store in the fridge in a glass container.

4 INGREDIENTS SODA BREAD

1. Preheat the oven to 190°C. 2. Prepare and flour baking tray you are going to use for baking. 3. In a large bowl mix all dry ingredients together: flour, baking soda and salt. 4. Add buttermilk and mix all ingredients together using a spoon, than when it starts to come together use your hands to pat and bring the dough together. 5. Shape it into a ball and place on a previously floured baking tray. Flatten the dough very gently with your hands to be 6-7 cm thick. 6. Score a cross on the top of the bread. 7. Put in the oven and bake it in the centre for about 50-60 min or tap the bottom for a hollow sound.

AVOCADO CHOCOLATE SPREAD

1. Peel and remove the stone from avocado and cut it into smaller pieces. 2. Put the avocado in the blender and add 2 spoons of cacao powder, 2 spoons of honey and 1 spoon of coconut oil. 3. Blend well until you achieve a creamy consistency. 4. Put it in a glass bowl and store in the fridge.

AROMATIC BANANA LOAF

1. Preheat the oven to 180°C. 2. Use baking paper to line the baking tin and grease well with coconut oil or butter. 3. In a large bowl mash ripe bananas with a fork or potato mashed than add 1 egg at a time and mix until smooth. 4. Add yogurt, chopped dates, desiccated coconut and chia seeds and mix well. 5. Add flours, baking soda, spices, melted coconut oil and milk at the end and stir well for a creamy consistency. 6. Pour into the tin and bake for about an hour until a skewer comes out clean.

AVOCADO PASTA

1. Pour water in a large boiling pan and add a pinch of salt. 2. When water starts boiling add pasta and boil for 10 min according to instructions. 3. Meanwhile, smash two ripe avocados in a large bowl. 4. Add yogurt, salt, black pepper, the juice from one lime and two crushed cloves of garlic. 5. Mix all ingredients until smooth. 6. Drain the pasta and add it into a bowl and stir everything together. 7. Serve it with roasted almond flakes.
