4 INGREDIENTS SODA BREAD

1. Preheat the oven to 190°C. 2. Prepare and flour baking tray you are going to use for baking. 3. In a large bowl mix all dry ingredients together: flour, baking soda and salt. 4. Add buttermilk and mix all ingredients together using a spoon, than when it starts to come together use your hands to pat and bring the dough together. 5. Shape it into a ball and place on a previously floured baking tray. Flatten the dough very gently with your hands to be 6-7 cm thick. 6. Score a cross on the top of the bread. 7. Put in the oven and bake it in the centre for about 50-60 min or tap the bottom for a hollow sound.

AVOCADO CHOCOLATE SPREAD

1. Peel and remove the stone from avocado and cut it into smaller pieces. 2. Put the avocado in the blender and add 2 spoons of cacao powder, 2 spoons of honey and 1 spoon of coconut oil. 3. Blend well until you achieve a creamy consistency. 4. Put it in a glass bowl and store in the fridge.

AROMATIC BANANA LOAF

1. Preheat the oven to 180°C. 2. Use baking paper to line the baking tin and grease well with coconut oil or butter. 3. In a large bowl mash ripe bananas with a fork or potato mashed than add 1 egg at a time and mix until smooth. 4. Add yogurt, chopped dates, desiccated coconut and chia seeds and mix well. 5. Add flours, baking soda, spices, melted coconut oil and milk at the end and stir well for a creamy consistency. 6. Pour into the tin and bake for about an hour until a skewer comes out clean.

AVOCADO PASTA

1. Pour water in a large boiling pan and add a pinch of salt. 2. When water starts boiling add pasta and boil for 10 min according to instructions. 3. Meanwhile, smash two ripe avocados in a large bowl. 4. Add yogurt, salt, black pepper, the juice from one lime and two crushed cloves of garlic. 5. Mix all ingredients until smooth. 6. Drain the pasta and add it into a bowl and stir everything together. 7. Serve it with roasted almond flakes.

HOMEMADE YOGURT

1. Pour milk in a pot and warm up to 40-50°C. 2. Take 100 ml of warm milk and mix with 100 ml of yogurt in a smaller dish. It is important to mix well to break all the lumps. 3. Pour mixture into the rest of the milk. 4. Wrap the pot in a tea towel and smaller blanket and leave it overnight. 5. In the morning yogurt will be ready. Store in the fridge until serving.

FETA STUFFED PEPPERS

1. Use a small knife to cut the top out of the peppers and leave them for later. 2. Scoop out the seeds and place pepper on the greased baking tray. 3. In a bowl mash feta cheese with a fork and add eggs in it. 4. Add salt, black pepper and mix together. 5. Stuff peppers with mixture and use the tops to close them. 6. Bake in the oven on 180°C for 45-50 min.

STUFFED MUSHROOMS

1. Preheat the oven to 180°C. 2. Grease the baking tray. 3. Wash mushrooms and place them on the baking tray. 4. Cut bacon in small cubes. 5. Grate cheese. 6. Stuff mushrooms with bacon and top with grated cheese and black pepper. 7. Place the tray in the oven and bake until mushrooms are soft and cheese is golden brown, about 20 minutes.

CHOCOLATE ORANGE CAKE

1. Roughly chop the dates. 2. Grate zest from an orange, squeeze the juice and add to a blender. 3. Peel bananas and add them together with all other ingredients into a blender. 4. Blend well until smooth. 5. Line baking cake dish with some baking paper and grease it. 6. Preheat the oven at 180°C. 7. Pour mixture in cake dish and put in the oven. Bake for about an hour.

LENTIL SOUP

1. The evening before you are planning to make lentils soup, wash lentils thoroughly and leave them overnight to soak in cold water. 2. Peel carrots and grate them. 3. Clean onion and chop in small cubes. 4. Place carrots, onions and olive oil in a large cooking pot. 5. Fry onions and carrots until onions become translucent. 6. Add salt, paprika, turmeric, black pepper and crushed cumin seeds. 7. Fry all together until it becomes compact and soft. If you notice that it started to burn add 50 ml of water in and continue frying. Water will eventually evaporate and help spices and vegetable to mix together. 8. Add lentils in a pot and pour 1000 ml of water. 9. Cover with a lid and simmer for an hour until lentils become soft. 10. Serve with a piece of bread and butter.

ZERO SUGAR ICE-CREAM

1. Freeze bananas and strawberries few hours before. 2. Put all ingredients in the blender and blend until smooth. 3. Store in the freezer until serving.
